In response to the dreaded spectre of taco trucks on every corner, Ingrid and I did our part this weekend, and visited one of our many local taco trucks. Hashtags: #ImWithTacos #TacoTrucksOnEveryCorner
Of course, there are other possibilities. There could be ramen trucks on every corner.
Or there could be pizza trucks on every corner.
Or there could be Vietnamese food trucks on every corner.
Or there could be empanada trucks on every corner.
Or there could be gyros trucks on every corner.
Or there could be udon trucks on every corner.
Heck, there could even be vegan burger trucks on every corner.
Or, one of my personal favorites: There could be Sangria trucks on every corner! Of course, liquor licensing might be tricky…
So here’s my question: How does any of this keep America from being great? Isn’t this one of the greatest things about us?

America cannot be great until:
1) There are Dim Sum trucks on every corner and
2) All of the aforementioned trucks are electric!

I work in Chicago’s Loop and go out to lunch on Fridays. Last Friday I decided to break with my usual restaurants and went to see any food trucks at the Daley Center. To my surprise I saw a half dozen of them doing decent business. I got a Korean beef bowl. Sadly I hear the mayor might be cracking down on trucks at the behest of brick & motor restaurants. Strangely I didn’t hear about the quote until I got back to work.
